This is used to make Modelling Chocolate.
Would you like to turn a ho-hum dessert into something eye popping? Anything you can do with fondant you can do with modeling chocolate.
Modeling chocolate, sometimes called chocolate plastique, has the advantage of being more delicious than fondant.
Modeling chocolate can be made with dark, milk, or white chocolate.
The white chocolate version can be colored as well.
It is the cake decorator' s equivalent of edible Play Dough.
Modeling chocolate can be used to make 3-D edible decorations that impress.
Modelling chocolate becomes like a chocolate dough that you can mold, shape, cut, tie, and paint to create whimsical or elegant decorations for cakes and desserts.
285 g Chocolate (milk, dark or white)
1/3 Cup Light Corn Syrup
Melted chocolate and then stir in the corn syrup. Mix until well combined and it forms a ball.
Wrap in plastic wrap and let it become a bit firm so its a bit stiffer than playdough.
You can use the fridge to spead up the process - if it becomes too firm, just break off a small piece and then knead until pliable.
Then play away!
Well wrapped it will keep for months. If it gets hard to work with, knead in a little more corn syrup until it is pliable again.
